Bánh flan phô mai (One of the Most Beloved Desserts in Vietnam)

Today, I’d like to introduce a very popular dessert in Vietnam: Cheese flan. It can be enjoyed on its own, with shaved ice and coffee. Vietnamese people love this dessert for its smooth, creamy texture and rich caramel flavor.
[Ingredients]
100g cane sugar , 50g water , 7 eggs (4 whole eggs + 3 egg yolks) , 50g processed cheese, 700 ml fresh milk, 200g condensed milk
[Instructions]
Make the caramel: Cook sugar, water over low heat without stirring. When it turns amber, immediately pour it into the flan cups.
Prepare the custard: Lightly beat the eggs and yolks. Heat milk, cheese, condensed milk over low heat until fully dissolved. Turn off the heat at about 60°C.
Slowly pour the warm milk mixture into the eggs while stirring gently. Strain 2–3 times to remove lumps and bubbles. Pour into the caramel-lined cups and cover.
Cook: Steam over very low heat for 45–55 minutes.
Check with a toothpick. Once cooked, cool completely and refrigerate for at least 4 hours or overnight before serving.
I’m not usually a fan of sweet treats but this dessert is just so delicious. Its delicate, creamy texture and irresistible flavor make it impossible for me to say no. Give it a try and let me know how you like it!
